8 oz. dark roast or coffee substitute (Cafix, Pero), freshly brewed
4 teaspoons brown sugar
3 tablespoons whipped cream
1 teaspoon cocoa powder
Fresh mint leaves for garnish


  1. Pour hot coffee or substitute into two tall parfait glasses.
  2. Put 2 teaspoons sugar in each glass. Briskly stir sugar to dissolve; let it foam up.
  3. Fill two-thirds of each glass with ice cubes.
  4. Swirl on whipped cream and dust lightly with cocoa powder.
  5. Serve garnished with fresh mint leaves and a straw.
